What Juicer To Use

There are 3 basic types of processes juicers use.  Each has its own advantages and disadvantages, which can be ideal depending on the type of operation you wish to run.

Automatic citrus juicers have great yields, are quick and easy to use, taste amazing and are very affordable but are limited in that they can only juice limes, lemons, oranges, grapefruits, and pomegranates. 

Even then, different units specialize in different citrus products depending on their count per box, shape, thickness of skin, juiciness, etc. The Zummo Z01, Z06, Z14 and Z40 are all examples of great models of automatic citrus juicers to consider – but remember to ask the salesman which model is best for which fruit, and which accessories are available with which models.

A centrifugal juicer uses a high-speed blade to shred the fruit or vegetable into pulp, which is then spun at high speeds to separate the pulp from the juice.  This process is versatile and can juice almost any fruit or vegetable. 

The advantages to the centrifugal juicer are speed and affordability while sacrificing some of the nutrition you would get from grinding/squeezing.  The centrifugal juicer is the most popular juicer for restaurants and juice bars.  The Nutrifaster N450 and the Zummo Z-22 are both models of centrifugal juicers that we recommend.

The third type of juicer is a cold press (also known as a hydraulic press).  The cold press uses a high amount of pressure to squeeze the fruit without producing heat so they are able to keep more of the nutrients intact. 

When compared to centrifugal juicers, cold presses produce higher yields, maintain more nutrients and have more versatility with the ability to juice nuts and leafy greens.  The main drawbacks are that they are more time consuming and they cost more.  The cold press is perfect for operations that want to produce their product in bulk.   The Freshly Squeezed FS line of cold presses (FS-8.5 countertop, FS-12, FS-20 PLUS and FS-30 PLUS) and the Zumonat are great examples of this type of machine at an affordable price.

Advances in Cold Press Juicing Equipment Produce Unforeseen Yields

FS-12Industry professionals  know that cold press juicing machines are the best way to get the purest, rawest and most nutrient rich  juice for juice bars, health food stores, juice cleansing facilities and other small to medium juicing operations. However, without certain key technologies cold press juicers risk losing yield every cycle.
Modern juicing technology including “Thin Film Pressing” and “Wavy Press Boards” which are included in the Freshly Squeezed FS series of cold press juicers (FS-12, FS-20 plus, FS-30, F-60, and FS-120) are helping the juicing industry get the most out of their juice.

Thin Film Pressing:

All cold pressed juicers use a cake pressure filtration system. One of the most important factors in juice production is cake thickness.  More cake thickness = less juice flow = less bang for the buck.

This is where thin film pressing comes into play.  By putting less produce in the filtration bag, cake thickness decreases, leading to more juice in less time and a greater ROI.

Wavy Press Boards:

Wavy boards are an upgrade over the standard “plank boards” by supplying a larger surface area.  This serves two functions:

• Better Distribution of Force.  This helps ensure that the produce is distributed in a single direction in the bag (up or down instead of side to side).
• Bags “tuck in” to the board.  This minimizes the amount the bag overhangs on the board.  Overhangs trap produce outside the press area, which leads to over-pressure at the seams and bursting bags.

Make lemon juice using Zummo citrus juicers – the juicers that give the best yield and product taste on the market. Mix 3/8 cup lemon juice and 40 ml sugar in 16 ounces water. You can tinker with the flavor by adding a bit more lemon juice or sugar, or a bit less or either or both.

 
 
 

  • Place a slice of lemon in each cube.
  • Pour your fresh made juice into tray making sure not to overfill.
  • Once tray is full, place on shelf in freezer.
  • After a few hours check if ice is solid.
  • Rub rim of glass with lemon.
  • Flip glass over onto plate of sugar to coat the rim.
  • Slowly pour in Alcohol or juice.
  • Once solid place in ice box or directly into your drink.

For adults:  Pour vodka over lemon juice ice to make a refreshingly sweet drink. The ice melting in your drink will mix with vodka. You could also make different flavor cubes and mix them with juice and alcohol for a less potent drink.
